At Tamarack Lamb & Wool, we have combined over 35 years of experience, with the premier breed of France, and the cool summers of Northern Minnesota, to offer you a premium dining experience.

The Ile de France breed is known in France for its savory flavor, tenderness, and superior lean muscling. We have purchased imported genetics to bring this breed here to Minnesota.

The Cool northern summers grow outstanding clover pastures, producing high quality, lean lamb, in a natural environment. Pasture raised lamb, and lamb grown on pasture, then briefly finished on corn, are an excellent natural source of CLA (Conjugated Linoleic Acid), found to reduce cancer, diabetes, heart disease, and obesity in laboratory studies.

Lamb is one of the world's healthiest foods.

We make a commitment to you, to not use herbicides or pesticides on the land, and to use only natural feed ingredients. No antibiotics, hormones, or animal based protein by-products are fed to our lambs.
